When I designed the BBQ menu I tried to imagine what it would be like to be one of the first pioneers heading west for land and country. Which Native tribe along the way was it that taught us how to cook tough cuts of meats with smoke, low and slow? Were the rough necks that took that journey just overflowing with courage? What did they eat?
